Thai food is my absolutely favourite and after visiting Thailand last summer I was fortunate enough to gain an insight into real authentic Thai cuisine.The sheer simplicity of the ingredients that are used is incredible. However at the same time simple does by no means at all mean lacking flavour!
I thought I would give a Thai Red curry a go last weekend and used chicken as my source of protein. You can of course substitute this with many other items such as turkey breast, tofu or even seafood such as cod or king prawns!
